I would like to know if you have what should be the minimum characteristics of a server to use shiny proxy with docker.

Shinyproxy itself is a fairly small Java application that can run with just 1 CPU and 50MB RAM.
But the true system requirements will depend on the nature of your Shiny app, and how many concurrent users you want to serve.
